For me this is the ultimate French summer food: artichokes with vinaigrette. Just plain sunshine on your plate. Artichokes are widely available in Burgundy, and just whisk together a delicious vinaigrette of (off course) Dijon mustard, vinegar, salt, pepper, garlic, a good virgin olive oil, some lemon juice and chives. Enjoy!
